Chuan Chuan Xiang
It is another version of Hot Pot but more popular than Hot pot. Some people call it Small hot pot in China. Chuan Chuan is originated from Leshan, the city south to Chengdu. It is now popular across China. They say where there is people there is Chuan Chuan. Chuan Chuan is the Chinese name of this food, it means a stick of things because the food is put on a bamboo stick and dipped into the pot to cook. In Sichuan, Chuan Chuan is pronounced Cuan Cuan.
Hot pot is available only in the restaurant now but Chuan Chuan is available on the streets as well although we don’t see them on the street too often today but a Chuan Chuan place is more like a stall and the seller does not need a big restaurant to sell them to their customers. Another reason of why this food is popular is also because for a hot pot, usually it is a big meal and it takes a long time to eat however a Chuan Chuan Meal is not so big. To eat Chuan Chuan it also won’t take a long time.
The food used in Chuan Chuan is basically the same of what is used in hot pot. Cow Intestines, Squids, Pork, Mushroom, Tofu, Cauliflower, etc are among the most popular ones. There is also a sauce bowl for you but simpler. There is hot Chuan Chuan and cold Chuan Chuan. Hot Chuan Chuan tastes like hot pot and cold Chuan Chuan tastes less hot and similarly spicy. In a hot Chuan Chuan you will have to do the cooking yourself as in a hot pot meal however in a cold Chuan Chuan they will cook the food you choose for you and the pot you use is a cold pot.
This is also a very spicy food.
